RECIPE: Green Chile & Chicken Casserole




Combine the Hatch Green Chile Enchilada sauce, water, chicken, tomatoes and onion in a large saucepan.  Stir, and heat on medium temperature until bubbly. Allow to gently simmer for approx. 15 minutes.

Preheat oven to 200 deg. C.  Spread 1/3 of mixture into a greased 9 x 13 inch (approx.) ovenproof dish.  Lay 4 tortillas over mixture (tortillas can overlap).  Spread 1/3 of mixture evenly over tortillas and place a layer of Hatch Whole Green Chiles evenly on top of the mixture.  Layer 4 more tortillas over mixture.  Sprinkle 1 cup of grated cheese evenly over tortillas.  If you have any remaining tortillas place them over previous layer and spread remaining mixture on top.

Cook in preheated oven for 15-20 minutes until bubbly.  Carefully remove casserole from oven and top with remaining cup of cheese.  Place back in oven until cheese has melted. 

Cut into serving size pieces and serve.  Can be topped with black olives, or sour cream.
