Cats and Dogs

I’m sitting here typing this and watching and listening to the rain pouring down ‘like cats and dogs!’  Heard this morning that roads have been closed between Dunedin and Christchurch and also some have been closed between Dunedin and Central.  The boulders are rolling and crunching down the creek at the bottom of the section – fingers crossed it doesn’t break its banks and storm up our back yard…

Anyway, on days like this – as it so often does, my mind turns to food.

In this case ‘comfort food’. 

Cat
Huevos Rancheros, to be precise.  This is not an official recipe … but an adaptation that is great for breakfast, or really anytime at all.
  • Corn Tortilla/s – tossed quickly in a hot pan to warm through
  • 1 or 2 eggs – poached or fried
  • Herdez Salsa (Verde or Casera ) warmed through if you prefer, just as good cold.
  • Refried Beans – warmed through
  • Grated cheese – any type
Huevos Rancheros

You can absolutely jazz this up with sliced avocado, a sprinkling of your favourite herbs, slice of lime – or even one of your favourite hot sauces.

Plop the egg/s on top of the warmed tortilla, cover with salsa, sprinkle with grated cheese and serve with a generous serving of refried beans.  Make sure that the plate is warm before using.  (Nothing worse than hot food on a cold plate.)  Best eaten alongside the Sunday paper and a nice cup of tea or coffee. 

Other Happenings
We finally received a shipment of fun ‘flag pens’ to advertise Mexifoods, the kind where there is a little tab that you pull out to reveal a picture or advertising inside. This month we'll be popping some of these into all our on-line orders.

May and June have been particularly busy for us. Thank you to those who have placed orders, and to those who have shared our page and passed on recommendations for our products by word of mouth.  We are constantly looking at new products and monitoring the favourites that people keep coming back to.
